Foodie Friday 1/17/25

 Hey Friends,

How are you all doing? I hope you are doing well today. I am happy to report that Mom and I are doing very good. The Lord is our strength and our help daily!

Have you seen our previous post this week? If you have not read them yet, please take a moment and look black. 

This has been a week of reflection for us. Here are the link to the posts from Tuesday, Wednesday and Thursday. We also posted a new video to our Boggs Family Ministries YouTube channel yesterday. I have posted it below. You can also find it in yesterday's post.


As most of you know, yesterday was Dad's first Heavenly birthday. We spent the day honoring Dad and remembering him.

Thank you to everyone who reached out to us yesterday, letting us know that you were praying for us! We did read each message and found it encouraging! I apologize that I did not get to respond to each text message or comment individually. I will try to get that done today.

It was great to spend time with our family yesterday! We thought it was only fitting to enjoy a good steak from Longhorn on his birthday. Longhorn was his favorite chain restaurant steak. His favorite order was an outlaw ribeye from Longhorn. Mom and I split one yesterday. 


Just as I suspected the food was delicious and the family time was even more precious! I also predicted that we would laugh a lot, cry some and reminisce even more. We did all three of those things! I think it was a fabulous way to spend Dad’s birthday, surrounded by those that we love!

Mom and I finished out the day by going to church with our church family at DRPC! Church was the normal thing to do on his birthday! If I had to guess Dad spent more of his birthdays going to church than not. 

Today being Foodie Friday on the blog, I thought it only right to share yesterday's pictures with you.

Foodie Friday Katz Deli

Hey Friends,

Welcome to another edition of Foodie Friday. Today, we are featuring a family favorite restaurant: Katz Deli in Texas. We first tasted its goodness in October 2013. We love their Reuben sandwich.

Dad and I were always planning our next stop at Katz! We were supposed to be going in this spring. Our previous trips in 2013 and 2020 were documented here on the blog! Click here to see those posts!

Here is something Dad wrote about Katz in October 2013. It is absolutely true, and we still laugh about it.

"We have been eyeing this place and their monster Reuben sandwiches for a long time. When Bro. Goodwin asked me to come for revival I instantly decided it was the right thing to do since it was close to this heavenly Reuben."

Last month, we went to the Houston, Texas area for business. Steve and Karen joined us for the trip. I knew Katz was a must on our to-do list. Dad always wanted Uncle Steve to try a Katz Reuben, too!

Mom, me, Steve, Karen and Bro. Don Goodwin had a wonderful lunch at Katz! It was so good to be there with family and friends! We did a lot of reminiscing about good times with Dad!

Stuffed cheesy potatoes were amazing!



I loved having Uncle Steve with me at Katz! I am so thankful for my Uncle Steve!

Foodie Friday - J Alexanders

Hey Friends,

I hope you are having a great day. We have had a good but eventful week. I will share more about it on a later day. Thank you for your continued prayers. We have needed them. 

It is time for another Foodie Friday installment. Today, we are rewinding to last Friday afternoon when we visited one of our favorite restaurants. 

J Alexanders was one of Dad’s top favorites! He especially loved their specialty prime rib. Dad always requested an end piece of the prime rib! 

We decided to enjoy a good meal with some family in memory of Dad. Also, Mom and I wanted to thank you a few people for helping us out so much!

Steve, Karen, Baby Carson, Lisa, Mamaw and Papaw were our dinner mates for the day. We had a wonderful time with family and reliving fond memories. All while enjoying scrumptious food. 
 

The meal started with appetizers of deviled eggs and spinach con queso.


Mamaw had to help Karen eat, while Carson drank is bottle. I hope Carson’s was prime rib flavored formula. 😂


Then we moved on to the entrees. A few of us had the prime rib. Mom has pork loin, a couple of our crew had a salad that looked too beautiful to eat and Papaw had a nice steak! The sides we chose were broccoli, smashed potatoes and a baked potato.

We all left well satisfied. Happy to have enjoyed our time at J Alexanders! I will close with the final food pictures for this post.

Foodie Friday A Christmas Eve Milkshake

Hey Friends,

I am here to share a Christmas tradition and special memory. Dad shared his love of eggnog with me. It became a special Christmas tradition.

When I was a very little girl, Dad always stopped Christmas Eve after our Morgan Christmas and bought a carton for us to enjoy together the next morning. 

Somewhere along the way, it evolved into getting an eggnog milkshake from United Dairy Farmers on Christmas Eve. For the last several years, Dad still stopped for my shake! He would not even take a sip because of the sugar. He was dedicated to controlling his blood sugar with his diet. 

I did not expect him to stop then, but he always stopped. Blizzard conditions and extreme cold did not keep him from getting milkshakes at UDF on Christmas Eve. It was so sweet of him to go out of his way to make me extra loved. Daddy did it for just Mom and me. My Mom would get peppermint chocolate chip. 

Mom and I knew Christmas would not be “normal” for us. There were some things we did differently this year. I still wanted to get my Christmas Eve UDF milkshake. It somehow made me feel closer to my Daddy. 

My Mom invited Papaw Danny to join us for Christmas Eve milkshakes. Uncle Danny said we were going to make Christmas Eve milkshakes a Morgan family tradition. I was so touched that he wanted to help me keep the tradition!

After our Morgan Christmas celebration was done. Nine of us loaded up and headed to get milkshakes. Sadly, the eggnog flavor was gone! Peppermint chocolate chip made with chocolate milk was a delicious replacement!

We then took our shakes to their church. It was a great way to cap off a wonderful Christmas Eve 2024! I am so thankful for all of my family!

Foodie Friday Alcapulco

Hey Friends,

It is time for another installment of Foodie Friday. Today, I thought it fitting to highlight Dad’s favorite salsa from Alcapulco in Lebanon, Ohio. 

Alcapulco has been one of our favorite places since shortly after they opened. The salsa is amazing, the food is fabulous, and the workers have become dear to us. Jorge and his team have been our friends for many years now. 


Sunday afternoon Mom and I went into see our friends. They are missing Dad along with us! Dad left a Davy size whole in a lot of hearts. His life had an impact on so many people. 

For lunch Sunday I had mutual favorite of mine and Dad’s, Carnitas Alcapulco. Oh, it was delicious food, and it made me feel a little closer to him that day. 


My friend Reagan Baker joined us for lunch. We enjoyed her company! She has wanted to experience the salsa she had heard Dad talk about so often.

Foodie Friday Loaded Potato Soup

 Hey Friends,

Mom and I have had a blog post idea for Foodie Friday for a while. Now is a great time to incorporate it into my rotation. Some weeks, I may share a favorite recipe or talk about good food I have enjoyed.

Dad taught us to love food and the experience of excellent food and cherish the memories. Eating was an event for us!  What better way to honor him than by talking about food?

Last winter, I was on the hunt for a good recipe for potato soup. I combined my favorite ingredients and created my own version. I am pleased with the outcome. 

We have had some cold days this week that were just right for soup. Mom was busy with paperwork. Wednesday afternoon. I fixed u Loaded Baked Potato Soup. It was just right on a cold day. I did not get pictures of the process this week. Here is a picture of the leftovers.


I thought it was even better the second day.

Here is the list of ingredients I use. This is an Instant Pot meal for me, but I am sure you could do it on the stove, too.

Ingredients
4 cans diced potatoes 
14 oz real bacon pieces
1 stick of butter
Chopped green onions
2 Tlbs minced garlic
Seasonings measurement to your taste.
Salt 
Pepper 
Onion powder
Garlic powder
1 c Milk
1c Heavy whipping cream
1c Chicken broth
1 block Cream cheese
2 c Cheddar cheese

Instructions 

Part 1

Add a stick of butter to the pot on sautee mode.
Then add 1 Tbs of minced garlic.
Next, add most of the bacon pieces and 
Most of the green onions. 
Add seasonings
Sautee for 10-15 minutes. Stir frequently 

Part 2

Add drained potatoes. 
The rest of the minced Garlic
Season some more and stir. 
Add chicken broth.
Cancel sautee.
Add lid set to sealing, not venting.
Cook on manual for 15 minutes. 
Pressure can be quick or naturally released. 
I usually do a quick release.

Part 3

Add Cheese, Cream Cheese, Milk and Heavy cream. 
Stir well to combine ingredients.
I turn the sautee feature on again to help things melt together. 
Then, I set the slow cook feature on for a few hours to keep it hot. 
I stir the soup occasionally. 

Part 4

Time to enjoy some Loaded Potato  Soup. Garnish is optional sour cream, bacon pieces and green onion.
