Hey Friends,
This is Odie checking in with you. I hope that you are having a fabulous day. How has life been treating you? I am doing well! God has definitely been so good to me! We are now in West Plains, Missouri at Junction Hill Pentecostal Church.
We slipped into home this week for less than 12 hours and it reminded me how great it was to be home for a little extra time earlier this year. It was strange being home for weeks at a time, but it was extremely useful.
I worked on a few small projects and I also worked on learning some homemaking skills. I still have a lot to learn, but I am making progress.
The kitchen is an area that I was able to spend some time practicing. I am slowly getting more comfortable. I know that I am not a professional yet! Everyone that has eaten my cooking is still alive and I count that as a success!
The Mishaps
I have had a few embarrassing mistakes along the way. I made dinner for Mamaw and Papaw. The main dish was an easy Instant Pot recipe. I did not plan on making soup, but that is how it turned out. Thankfully it still tasted good. At least the weather was right for soup.
What was my mistake? The recipe called for one cup of chicken broth... not one container!
Mistake number two happened when I fixed the same dish for my parents. I was careful to measure the correct amount of liquid. The final product looked much better and I was happy. Until we started eating the meal. Something was missing in the flavor!
What did I forget? A packet of the dry ranch... there was my missing flavor!
I was thrilled to fix a nice dinner for Mom on Mother's Day. The meal was great. Then I overcooked the dessert, in the microwave! I was so embarrassed! Here is a note to self, Odie, ALWAYS read and re-read the instructions!
More Kitchen Adventures
Tuna is a staple in my cabinet. There are a couple of different ways that I like to prepare it. Now I have a third tuna option. I was craving tuna for dinner one night and, on a whim, I decided to try something different. I was extremely pleased with the result.
I think my creation is a keeper in the Odie's Kitchen Creation Collection. It is super easy, which is a huge plus! You only need four ingredients and cooking is not required. Here are the ingredients that I use. You can adjust the amounts as needed.
Odie's Tuna Casserole
I use one can of tuna in water.
Add a couple scoops of dill relish.
The secret to my creation is Frisch's tarter sauce. I add three or four large scoops of tarter sauce. Then I stir all the ingredients together.
I also like to add shredded cheese to mine.
